This Jiffy Cornbread Casserole is an easy side dish for your Thanksgiving or every day meals. I like to describe it as a gooey cheese cornbread.
- 1 box Jiffy Corn Muffin Mix
- 1/2 cup Butter melted
- 1 can Whole Kernel Corn drained
- 1 can Cream style Corn
- 1 cup Sour Cream
- 2 Eggs
- 8 oz Cheddar Cheese shredded
1Preheat oven to 375.
2Grease casserole dish.
3Beat eggs and set aside.
4Pour butter into prepared dish.
5Add corn (whole kernel and cream style) into dish.
6Add eggs and sour cream.
7Stir until mixed.
8Add 1/2 cheese and stir until mixed.
9Add muffin mix and stir until blended.
10Top with remaining cheese.
11Bake 50-60 minutes or until center is no longer jiggly.
