Cowboy Nachos with Pulled Pork

Ingredients:

  • 1 bag tortilla chips
  • 2 lbs pork shoulder
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 1 cup shredded cheese (such as cheddar or Monterey Jack)
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup diced jalapeno peppers
  • 1/2 cup black beans, drained and rinsed
  • 1/4 cup chopped fresh cilantro
  • Salsa and sour cream, for serving (optional)

Instructions:

1Preheat your oven to 350°F (180°C).

 

2In a slow cooker, combine the pork shoulder, chili powder, cumin, paprika, garlic powder, salt, and pepper. Cover and cook on low for 8-10 hours, or until the pork is tender and falls apart easily.

3Using two forks, shred the pork into thin strips.

 

4Arrange the tortilla chips in an even layer on a large baking sheet.

 

5Spread the shredded pork over the chips, then sprinkle with the cheese, tomatoes, red onion, jalapeno peppers, and black beans.

 

6Bake the nachos in the preheated oven for 8-10 minutes, or until the cheese is melted and bubbly.
