This Creamed Corn Recipe is a favorite of ours! It has a creamy, bright, and delicious flavor and is very easy to make, taking only 20 minutes from start to finish. It’s a great side dish to serve year-round, but we especially love it during colder months and for special occasions like Thanksgiving and holiday meals.
Creamed Corn
Ingredients
- 2 1/2 cups fresh corn (from about 4 ears) (can use thawed and drained frozen corn or 30 ounces of canned corn, drained and rinsed)
- 1 1/2 tablespoons sugar
- salt and pepper to taste
- 2 tablespoons freshly grated Parmesan
- 5 tablespoons unsalted butter divided
- 1/2 minced shallot
- 2 tablespoons all purpose flour
- 1 1/2 cups half and half
Instructions
1Melt 2 tablespoons of butter in a pot over medium heat
2Sauté the shallots in the pot for 2 to 3 minutes
3After sautéing the shallots, add the corn to the pot and continue to sauté for 2 to 3 minutes. Season with salt and pepper. Once the corn mixture is finished cooking, remove it from the skillet and set it aside
4Melt the remaining butter in the skillet over heat
5Stir the flour into the melted butter in the skillet and cook for 1 to 2 minutes, stirring constantly
6Pour the half and half into the mixture in the skillet, stirring until the mixture is smooth and there are no lumps. Reduce the heat to medium-low and simmer for 3 to 4 minutes, until the mixture is thick enough to coat the back of a wooden spoon. Season with salt and pepper
7Stir in the Parmesan until the mixture is smooth
8Add the corn and shallot mixture and sugar to the half and half mixture in the skillet and stir until well combined. Simmer for an additional 2 minutes, until the sugar has dissolved. Adjust the seasoning with salt and pepper as needed
9Once the creamed corn is finished cooking, remove it from the heat and serve it immediately
