Ingredients

Chile con Carne Sauce:

  • 1 teaspoon Pepper
  • 1 teaspoon Salt
  • 1 cup Beef or Chicken Broth
  • 2 teaspoons Paprika
  • 1 cup Crushed Tomatoes or Tomato Puree
  • 1/2 teaspoon Garlic Powder
  • 3 Tablespoons Chili Powder
  • 1 teaspoon Cumin
  • 1 lb. Ground Beef
  • 2 Tablespoons Cornstarch (mixed with 1 cup of water before adding)

Chile con Carne Enchiladas:

  • 12 Corn Tortillas
  • 3-4 cups Cheddar Cheese (medium or sharp)
  • 3 Tablespoons Oil

Garnish:

  • 1/4 White Onion (diced)
  • Cilantro (chopped)

Instructions

Chile con Carne:

1To make chili con carne, start by heating a large skillet or pot over medium-high heat. Next, add ground beef and cook it for 8-9 minutes, breaking it up into small pieces as it cooks.

2Once the beef is cooked, sprinkle it with chili powder, paprika, cumin, garlic powder, salt, and pepper. Then, pour in some tomatoes and let the mixture simmer over medium heat for 5-10 minutes.

3Add some beef or chicken broth to the pot, and then mix together cornstarch and water in a small bowl until the mixture is smooth. Pour the cornstarch mixture into the pot with the chili con carne, and let it simmer and thicken for an additional 10 minutes.

To make Enchiladas:

1To make enchiladas, start by heating a large skillet over medium heat. Add some oil and let it heat up for several minutes. Carefully add each tortilla to the oil and let it soften for about 5 seconds. Remove the tortilla from the oil and repeat the process for each tortilla. Preheat your oven to 400 degrees Fahrenheit.

2Next, ladle about 1 cup of sauce into a 9 x 13 inch baking dish. Sprinkle some cheese down the center of each tortilla, and then roll the tortilla up and place it seam side down in the baking dish. Pour the rest of the sauce over the enchiladas and sprinkle with any remaining cheese.

3Bake the enchiladas for 10-14 minutes, or until the cheese is melted and the dish is hot and bubbly. Top the enchiladas with chopped onions and cilantro, if desired, and serve hot.
