Sweetcorn Chowder

  • 200 ml (1 cup) double cream
  • 1 litre (4 cups) chicken or vegetable stock
  • Fresh parsley, chopped, for garnish
  • 500 g (3 cups) sweetcorn, fresh, tinned, or frozen
  • 400 g (1 lb) new potatoes, diced
  • 150 g (5 ¼ oz) smoked streaky bacon, diced
  • Salt and pepper, to taste
  • 2 celery stalks, 100g, diced
  • 2 medium carrots, 200g, diced
  • 1 large onion, 150g, finely chopped

Instructions

1In a large pot, fry the diced smoked streaky bacon over medium heat until it turns golden and crispy. Scoop out the bacon and set it aside, keeping the rendered fat in the pot for cooking.

2Toss the chopped onion, carrots, and celery into the pot. Cook them for approximately 5 minutes, stirring occasionally, until the vegetables become tender and fragrant.

3Add the diced new potatoes to the pot and stir them in, letting them cook for 2 minutes. Pour in the chicken or vegetable stock and bring the mixture to a boil. Lower the heat and let it simmer for 10-15 minutes, or until the potatoes are soft and cooked through.

4Stir the sweetcorn into the pot. For fresh or frozen sweetcorn, let it cook for about 5 minutes. If you’re using tinned sweetcorn, cook it for around 3 minutes instead.

5Pour in the double cream and add the cooked bacon back to the pot. Let the chowder simmer gently for another 5 minutes until everything is warmed through. Adjust the seasoning with salt and pepper to suit your taste.
