These delicious, savory Mashed Potato Patties are crispy on the outside and soft and creamy on the inside. They’re the best way to use up your leftover mashed potatoes and make for a tasty side dish recipe!
- 4 cups mashed potatoes prepared as you usually make mashed potatoes
- 1/2 cup milk
- 1/3 cup fine dry bread crumbs
- ¼ cup yellow onion minced
- ¼ cup green onion minced
- 1 egg beaten
- 1 teaspoon dried parsley
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/8 teaspoon garlic powder
1In a large bowl combine all ingredients, stirring so all the ingredients are completely combined.
2With your hands, shape into small patties. On average you should make about 14-16 patties from this recipe.
3Coat a skillet lightly with olive oil and heat on medium-high heat. Add potato patties, cooking about 4-5 minutes on each side, or until browned.
4Serve as is, or with ketchup or sour cream.
