Another delicious Mexican inspired recipe is our Keto Sheet Pan Nachos! They are just so quick and easy to make, not to mention, super tasty and fun to eat!
- 1 tablespoon Olive Oil
- ½ Red Onion diced
- 7 ounces Basic Ground Beef
- 2 teaspoons Taco Seasoning
- ⅓ cup Keto Enchilada Sauce
- Salt to taste
- Pepper to taste
- 3 ounces Pork Rinds
- ½ cup Cheddar Cheese shredded
- ¼ cup Black Olives sliced
- 4 tablespoons Tomato diced
- 1 Scallion sliced
- ¼ cup Sour Cream
1Place a nonstick frying pan over high heat.
2Add the oil and half of the diced red onion, saute for 1 minute.
3Add the browned beef and saute for another minute before adding the taco seasoning and mix well.
4Saute for another minute before adding the enchilada sauce. Add salt and pepper to taste and mix well.
5Remove from the heat and set aside.
6Preheat your broiler/grill to high or around 200c/390F.
7Spray a sheet pan with olive oil and evenly spread out your pork rinds.
8Gently spoon over the ground beef mixture and sprinkle over the cheese.
9Broil/Grill until the cheese is melted and bubbling – about 5-8 minutes.
10Sprinkle over the remaining diced onion, along with the black olives, tomato, and scallions. To make fancy stripes with your sour cream, add it to a sandwich bag, snip off the corner and pipe it over your nachos.
