Ingredients
For the Chicken:
- 2 boneless, skinless chicken breasts (or thighs), diced
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- 1 tablespoon olive oil
For the Orzo:
- 1 tablespoon butter
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 cup orzo pasta
- 2 cups chicken broth
- ½ teaspoon Italian seasoning
- ½ teaspoon paprika (optional, for a warm depth of flavor)
- 1 (5.2 oz) package Boursin Garlic & Herb cheese
- ½ cup heavy cream (or milk for a lighter version)
- ¼ cup grated Parmesan cheese
- Fresh parsley or basil for garnish
Instructions
1Cook the Chicken: Season diced chicken with salt, pepper, and garlic powder. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden brown and fully cooked, about 5-7 minutes. Remove and set aside.
2Make the Orzo: In the same skillet, melt butter and sauté onion until soft (about 2 minutes). Add garlic and cook for another 30 seconds. Stir in orzo, chicken broth, Italian seasoning, and paprika. Bring to a simmer and cook until the orzo is tender (about 10 minutes), stirring occasionally.
3Combine Everything: Lower the heat and stir in Boursin cheese, heavy cream, and Parmesan cheese until melted and creamy. Return the cooked chicken to the pan and mix well.
4Serve & Garnish: Sprinkle with fresh parsley or basil and extra Parmesan, if desired. Serve hot and enjoy!
