Ingredients
  

For the Salmon Bites:

  • 1 lb fresh skinless salmon fillets, cut into 1-inch cubes
  • 1/2 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Vegetable oil for frying

For the Bang Bang Sauce:

  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tbsp sriracha adjust to taste
  • 1 tbsp honey
  • 1 tbsp lime juice

Instructions
 

  • Pat the salmon cubes dry with paper towels.
  • Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with panko mixed with garlic powder, onion powder, paprika, salt, and black pepper.
  • Dredge each salmon cube in the flour, dip in the egg, and coat with the seasoned panko. Set aside.
  • Heat about 1 inch of vegetable oil in a skillet over medium heat.
  • Fry the salmon bites in batches for 2–3 minutes per side, until golden and crispy. Transfer to a paper towel–lined plate.
  • In a small bowl, whisk together all sauce ingredients until smooth.
  • Drizzle the bang bang sauce over the crispy salmon bites before serving, or serve the sauce on the side for dipping.

Notes

  • For a healthier option, air fry the salmon bites at 400°F (200°C) for 8–10 minutes, flipping halfway through.
  • Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat in an oven or air fryer for best texture.
  • For added crunch, sprinkle with toasted sesame seeds or crushed peanuts before serving.
