- 1 rotisserie chicken meat shredded (3-4 cups)
- 6-8 medium flour tortillas
- 1 cup mayonnaise
- 1 cup shredded sharp cheddar cheese plus extra for topping, optional
- 3 tbsp diced pickled jalapeños + 1 tbsp juice from jar
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp cayenne pepper adjust to taste
- Salt and black pepper to taste
- Cooking spray or oil
In a bowl, mix shredded chicken, mayo, jalapeños + juice, cheese, cumin, chili powder, cayenne, salt, and pepper.
Place filling on one half of each tortilla. Fold tortilla over.
Cook in a lightly oiled skillet over medium high heat for 2-3 mins per side until golden and crispy.
Transfer to cutting board, slice into triangles, and serve hot with dipping sauces.
