One Pan Creamy Garlic Chicken with Spinach and Sun Dried Tomatoes

This creamy garlic chicken is packed with flavor, made in just one pan, and perfect for busy weeknights. Juicy pan seared chicken is coated in a rich, garlicky Parmesan sauce with sun dried tomatoes and spinach, ready in 30 minutes.

Ingredients:

  • 2 large boneless, skinless chicken breasts (cut in half lengthwise)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 cup fresh spinach
  • 1 tablespoon butter
  • Red pepper flakes (optional, for spice)

Instructions:

1Season the Chicken: Sprinkle salt, pepper, and paprika over both sides of the chicken pieces.

 

2Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 4-5 minutes per side until golden brown and cooked through. Remove from the pan and set aside.

3Make the Sauce: In the same pan, melt butter and sauté garlic for 30 seconds until fragrant. Add sun-dried tomatoes and cook for another minute.

 

4Simmer: Pour in chicken broth and heavy cream, then stir in Parmesan cheese and Italian seasoning. Let it simmer until slightly thickened.

 

5Add Spinach: Toss in the spinach and let it wilt for about a minute.

 

6Return Chicken to the Pan: Place the seared chicken back into the pan and spoon the sauce over the top. Let it cook for another 2-3 minutes.
