Cheesy Chicken Broccoli Tortellini
Ingredients
- 1 teaspoon olive oil
- 2 cloves garlic, minced
- 1 1/2 cups low-sodium chicken broth
- 1 cup milk
- 1 (20 ounce) package cheese tortellini
- 3 cups fresh broccoli, roughly chopped
- 1 (8 ounce) package cream cheese
- 1/2 cup grated Parmesan cheese
- 2 cups cooked chicken, diced
- salt and black pepper
Instructions
1Heat olive oil over medium-high heat in a large pot. Add garlic and cook 30 seconds until fragrant.
2Add chicken broth and milk. Bring to a boil.
3Add tortellini and cook 2 minutes.
4Add broccoli and continue to cook for about 3 minutes or so, stirring as needed, until tortellini is cooked and broccoli is bright green.
5Lower heat and stir in cream cheese and Parmesan, until melted.
6Stir in cooked chicken.
7Season to taste with salt and pepper.
8Serve with extra Parmesan on top.

If using frozen tortellini, they make take an extra minute or 2. Just check the instructions on the package.
