White Castle Sliders

Ingredients
  

  • 1 pound ground beef 80/20 blend recommended
  • 1 small onion finely chopped or minced
  • 8 ounces Velveeta cheese cubed
  • 2 tablespoons dry onion soup mix this is 1/2 of a 1 ounce packet
  • 12 slider buns or Hawaiian rolls sliced in half horizontally
  • 12 slices dill pickles
  • Optional for serving: Ketchup and yellow mustard

Instructions
 

  • Preheat oven to 350°F. Line a baking sheet with parchment paper.
  • In a large skillet, cook ground beef and chopped onion over medium high heat until beef is no longer pink and onion is soft. Break beef into very small crumbles. Drain mixture thoroughly in a colander.
  • Return drained mixture to skillet over low heat. Add cubed Velveeta and onion soup mix. Stir constantly until cheese is completely melted and mixture is smooth.
  • Place bottom halves of slider buns on prepared baking sheet. Evenly distribute the warm meat mixture over the buns.
  • Place top halves of buns over the filling. Cover the entire baking sheet tightly with aluminum foil.
  • Bake for 15-20 minutes, or until buns are warm and filling is bubbly.
  • Remove from oven, uncover, and immediately top each slider with a pickle slice.
  • Cut sliders apart if necessary and serve immediately with ketchup and mustard if desired.

Notes

  • For more sliders, simply scale up ingredients: 1.5 lbs beef for 18 sliders, 2 lbs for 24, etc.
  • Drain the beef mixture well to prevent soggy buns.
  • Assemble and freeze unbaked for a future quick meal. Bake from frozen, covered, adding 10 minutes to baking time.
