The Juiciest Skillet Turkey Burgers

This is the only turkey burger recipe you'll ever need! Secretly kept juicy with ricotta cheese and cooked in a skillet for a perfect crust. Never dry, always delicious.

Ingredients
  

  • pounds 93% lean ground turkey
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 teaspoons Worcestershire sauce
  • ½ cup whole milk Ricotta cheese
  • ¼ cup Italian seasoned bread crumbs
  • 2 teaspoons Dijon mustard
  • 1 tablespoon vegetable oil
  • 4 hamburger buns for serving

Instructions
 

  • Preheat oven to 350°F.
  • In a medium bowl, combine ground turkey, salt, pepper, Worcestershire, ricotta, bread crumbs, and mustard. Mix with hands until just blended.
  • Divide mixture into 4 equal portions. Form into balls, then flatten into ¾ inch thick patties. Press a slight depression in the center of each patty.
  • Heat a large, ovenproof skillet over medium heat for 4-5 minutes until very hot. Add oil and swirl to coat.
  • Add patties and cook without moving for 3-4 minutes, until a dark golden crust forms.
  • Flip patties and cook for 3 minutes more.
  • Transfer skillet to the oven and bake for 7-8 minutes, or until internal temperature reaches 160°F.
  • Serve immediately on buns.

Notes

  • Don't Overmix: Mix the burger ingredients just until combined to avoid tough burgers.
  • The Dimple: Making a slight depression in the center of the raw patty prevents it from puffing up during cooking.
  • Skillet is Key: A heavy, ovenproof skillet (like cast iron) is essential for getting a good sear.
  • Freezer Friendly: Shape patties and freeze on a parchment lined plate. Once solid, transfer to a freezer bag for up to 3 months. Thaw in fridge before cooking.
