Total Time 25 minutes mins
- 1¼ pounds 93% lean ground turkey
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- 2 teaspoons Worcestershire sauce
- ½ cup whole milk Ricotta cheese
- ¼ cup Italian seasoned bread crumbs
- 2 teaspoons Dijon mustard
- 1 tablespoon vegetable oil
- 4 hamburger buns for serving
Preheat oven to 350°F.
In a medium bowl, combine ground turkey, salt, pepper, Worcestershire, ricotta, bread crumbs, and mustard. Mix with hands until just blended.
Divide mixture into 4 equal portions. Form into balls, then flatten into ¾ inch thick patties. Press a slight depression in the center of each patty.
Heat a large, ovenproof skillet over medium heat for 4-5 minutes until very hot. Add oil and swirl to coat.
Add patties and cook without moving for 3-4 minutes, until a dark golden crust forms.
Flip patties and cook for 3 minutes more.
Transfer skillet to the oven and bake for 7-8 minutes, or until internal temperature reaches 160°F.
Serve immediately on buns.
- Don't Overmix: Mix the burger ingredients just until combined to avoid tough burgers.
- The Dimple: Making a slight depression in the center of the raw patty prevents it from puffing up during cooking.
- Skillet is Key: A heavy, ovenproof skillet (like cast iron) is essential for getting a good sear.
- Freezer Friendly: Shape patties and freeze on a parchment lined plate. Once solid, transfer to a freezer bag for up to 3 months. Thaw in fridge before cooking.
