- ΒΌ cup rice wine vinegar
- 2 tablespoons soy sauce or tamari
- 1 tablespoon toasted sesame oil
- 1 tablespoon granulated sugar
- 1 clove garlic minced or pressed
- 1 teaspoon fresh ginger grated
- 2 green onions thinly sliced
- 2 tablespoons fresh cilantro leaves chopped
- 1 teaspoon sesame seeds
- 2 hard boiled eggs sliced (for serving, optional)
Cook the soba noodles in a large pot of boiling water according to package instructions (usually 4-6 minutes). Drain and rinse thoroughly under cold water. Set aside to drain well.
In a small bowl, whisk together the rice wine vinegar, soy sauce, sesame oil, sugar, minced garlic, and grated ginger until the sugar is dissolved.
In a large bowl, combine the cooled soba noodles, sliced green onions, and chopped cilantro.
