Ingredients
  

  • 8 ounces soba noodles
  • ΒΌ cup rice wine vinegar
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon granulated sugar
  • 1 clove garlic minced or pressed
  • 1 teaspoon fresh ginger grated
  • 2 green onions thinly sliced
  • 2 tablespoons fresh cilantro leaves chopped
  • 1 teaspoon sesame seeds
  • 2 hard boiled eggs sliced (for serving, optional)

Instructions
 

  • Cook the soba noodles in a large pot of boiling water according to package instructions (usually 4-6 minutes). Drain and rinse thoroughly under cold water. Set aside to drain well.
  • In a small bowl, whisk together the rice wine vinegar, soy sauce, sesame oil, sugar, minced garlic, and grated ginger until the sugar is dissolved.
  • In a large bowl, combine the cooled soba noodles, sliced green onions, and chopped cilantro.
  • Pour the prepared sauce over the noodle mixture. Toss everything together until evenly coated.
  • Sprinkle with sesame seeds and serve immediately, garnished with hard boiled egg slices if desired.

Notes

  • Rinsing Noodles: Rinsing the cooked soba in cold water is essential to stop the cooking, cool them, and prevent sticking.
  • Make Ahead: This dish is excellent for meal prep. Store in an airtight container in the fridge for up to 3 days.
  • Customize: Add shredded chicken, tofu, shrimp, or your favorite crunchy vegetables like carrots or bell peppers.
