One-Skillet Salsa Pork Chops

These easy Salsa Skillet Pork Chops are a 20 minute, one-pan meal! Juicy pork simmers in a zesty salsa sauce with corn and beans for a flavorful, fuss free dinner.

Ingredients
  

  • 6 boneless pork loin chops 6 oz each
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 cups corn kernels
  • 1 15 oz can pinto beans, rinsed and drained
  • 1 ¼ cups chunky salsa
  • 2 tablespoons water
  • 1 teaspoon ground cumin

Instructions
 

  • Season pork chops with salt and pepper.
  • Heat oil in a large skillet over medium high heat. Brown chops for 2-3 minutes per side. Remove and set aside.
  • To the same skillet, add corn, pinto beans, salsa, water, and cumin. Stir and bring to a boil.
  • Return pork chops to the skillet, nestling them into the sauce. Cover, reduce heat to low, and simmer for 6-8 minutes, until pork internal temperature reaches 145°F.
  • Let stand for 5 minutes before serving.

Notes

Salsa Choice: The salsa is the star! Use your favorite brand and heat level; mild for kids, medium or hot for more kick.
Don't Skip the Sear: Browning the pork chops first adds a deep, savory flavor that makes the whole dish better.
Resting is Key: Letting the pork rest for 5 minutes after cooking ensures it stays juicy and tender.
