- 4 boneless skinless chicken breasts
- 1 cup cherry tomatoes halved
- 1 medium red onion thinly sliced
- 3 cloves garlic minced
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish optional
Season chicken breasts on both sides with salt, pepper, and Italian seasoning.
Heat olive oil in a large skillet over medium heat. Add chicken and sear for 4–5 minutes per side, until golden and mostly cooked through. Remove and set aside.
In the same skillet, add garlic, red onion, and cherry tomatoes. Cook for 3–4 minutes, stirring occasionally.
Stir in balsamic vinegar and honey. Let the sauce bubble for 2 minutes to reduce slightly.
Return chicken to skillet and spoon sauce over the top. Simmer for 5–7 minutes, or until chicken is fully cooked and the sauce thickens.
Garnish with chopped parsley and serve warm.
