Lemon Garlic Baked Ricotta

- 2 cups 16 oz whole milk ricotta cheese
- 1-2 tablespoons heavy cream or milk if needed
- Zest of 1 lemon
- 2 cloves garlic minced
- ¼ teaspoon kosher salt
- 2 tablespoons extra virgin olive oil divided
Preheat oven to 350°F (180°C).
In a bowl, mix ricotta. If it seems dry, stir in 1-2 tbsp cream until spreadable.
Stir in lemon zest, minced garlic, and salt.
Spread mixture into greased ramekins or a small baking dish. Drizzle with 1 tbsp olive oil.
Bake for 15-20 mins until top is lightly golden.
Drizzle with remaining 1 tbsp olive oil. Serve immediately with toasted bread.
Ricotta Quality: Fresh, high quality ricotta makes a noticeable difference in creaminess and flavor.
Cream Adjustment: Only add cream if your ricotta is dry and crumbly. Good ricotta should be creamy enough on its own.
