Ingredients
  

  • 1.5 pounds boneless skinless chicken breasts
  • 1 tablespoon olive oil optional, if needed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 6 slices bacon cooked and crumbled
  • 8 ounces cream cheese softened
  • 1/4 cup heavy cream
  • 1 ounce ranch seasoning mix store-bought or homemade
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped green onions or parsley optional, for garnish

Instructions
 

  • In a large skillet over medium heat, cook the bacon until crispy. Remove and set aside, leaving about a tablespoon of bacon grease in the pan.
  • Season chicken breasts with garlic powder, onion powder, salt, and pepper. Cook in the same skillet until golden and fully cooked, about 5–7 minutes per side. Remove and slice or shred the chicken.
  • Lower the heat, then add the cream cheese and heavy cream to the skillet. Stir until the mixture becomes smooth and creamy.
  • Add ranch seasoning and shredded cheddar cheese. Stir until the cheese melts into the sauce.
  • Return the cooked chicken to the skillet. Mix well to coat the chicken in the sauce.
  • Add the crumbled bacon and stir everything together.
  • Garnish with chopped green onions or parsley if desired. Serve hot over cauliflower rice or steamed veggies.

Notes

  • You can substitute chicken thighs for breasts if you prefer darker meat.
  • This dish is perfect for meal prep and can be refrigerated for up to 3 days.
  • Want a spicy kick? Add a pinch of red pepper flakes or diced jalapeños.
