Ingredients

  • 1 lb ground beef
  • 2 tablespoons butter
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 cups beef broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1/2 cup cream cheese
  • 1/2 teaspoon paprika
  • 1/2 teaspoon mustard powder
  • Salt and pepper to taste

Optional Toppings:

  • Cooked bacon chopped
  • Pickles chopped
  • Green onions sliced

Instructions
 

  • In a large pot or Dutch oven over medium heat, cook the ground beef until browned. Drain excess grease if needed.
  • Add butter, diced onion, and minced garlic. Sauté until the onions become soft and translucent.
  • Pour in the beef broth and bring the soup to a gentle simmer.
  • Add the cream cheese and stir until it’s melted and well incorporated.
  • Stir in heavy cream and shredded cheddar cheese. Mix until the soup is smooth and creamy.
  • Season with paprika, mustard powder, salt, and pepper to taste. Simmer for 10–15 minutes, stirring occasionally.
  • Serve hot, topped with crispy bacon, chopped pickles, or green onions if desired.
