Ingredients
  

  • 1 lb ground beef 80% lean
  • 5 cups chopped green cabbage about ½ a head
  • 28 oz canned diced tomatoes with liquid
  • 5 cups beef stock or 4 cups beef stock + 1 cup water
  • 1 cup riced cauliflower fresh or frozen
  • ½ cup diced carrots
  • tsp salt
  • 1 tsp dried oregano
  • 1 tsp ground thyme
  • 2 tbsp chopped fresh parsley for garnish

Instructions
 

  • In a large soup pot or Dutch oven over medium-high heat, add ground beef and carrots. Break the beef apart with a spoon and cook until browned, about 5 minutes.
  • Add the diced tomatoes (including juices), chopped cabbage, beef stock, riced cauliflower, salt, oregano, and thyme. Stir everything together.
  • Increase heat to bring the mixture to a simmer. Once it simmers, cover the pot and reduce the heat to medium-low. Simmer for 30 minutes, or until the cabbage is very tender.
  • Remove the lid, stir the soup, and garnish with fresh parsley before serving.

Notes

  • You can substitute ground beef with ground turkey or pork.
  • For a spicier version, add red pepper flakes or chopped jalapeños.
  • To stretch the recipe for more servings, add extra beef stock or water after cooking.
