- 1 lb dried white beans
- 2 onions chopped
- 2 tablespoons olive oil
- 4 garlic cloves minced
- 5 cups chicken broth
- 2 quarts water divided
- 1 Parmigiano Reggiano rind
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- 1 teaspoon fresh rosemary chopped
- 1 lb smoked sausage sliced
- 6 carrots sliced
- 1 lb kale stems removed and chopped
Soak beans in water, boil briefly, and rest for 1 hour. Drain and rinse.
Sauté onions in olive oil until soft. Add garlic.
Add beans, broth, 1 quart water, rind, bay leaf, rosemary, salt, and pepper. Simmer until tender.
Brown sausage in skillet and set aside.
Add carrots and simmer briefly.
Add kale and remaining water; cook until tender.
Stir in sausage, adjust seasoning, and serve.
