Ingredients
  

  • 1 lb dried white beans
  • 2 onions chopped
  • 2 tablespoons olive oil
  • 4 garlic cloves minced
  • 5 cups chicken broth
  • 2 quarts water divided
  • 1 Parmigiano Reggiano rind
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 1 teaspoon fresh rosemary chopped
  • 1 lb smoked sausage sliced
  • 6 carrots sliced
  • 1 lb kale stems removed and chopped

Instructions
 

  • Soak beans in water, boil briefly, and rest for 1 hour. Drain and rinse.
  • Sauté onions in olive oil until soft. Add garlic.
  • Add beans, broth, 1 quart water, rind, bay leaf, rosemary, salt, and pepper. Simmer until tender.
  • Brown sausage in skillet and set aside.
  • Add carrots and simmer briefly.
  • Add kale and remaining water; cook until tender.
  • Stir in sausage, adjust seasoning, and serve.
