  • 1 lemon sliced
  • 6 tablespoons unsalted butter softened
  • 3 cloves garlic minced
  • 2 teaspoons fresh thyme chopped
  • 1 ½ teaspoons fresh sage chopped
  • 1 ½ teaspoons fresh rosemary chopped
  • 2 teaspoons kosher salt

  • Pat turkey dry. Gently loosen skin from meat. Spread half the herb butter under the skin. Secure skin with toothpicks.
  • Place turkey on lemon slices. Spread remaining butter over skin. Season with salt and pepper.
  • Roast for about 1 hour 30 mins, until internal temperature reaches 165°F.
  • Let rest, tented with foil, for 20 minutes before carving.

Notes

Dry the Skin: Patting the skin dry is the secret to getting it crispy in the oven.
Don't Skip the Rest: Resting the turkey is non negotiable for juicy meat. Don't carve it right away!
Fresh Herbs: For the best flavor, use fresh herbs. If you must use dried, use 1/3 of the amount (e.g., ⅔ tsp dried thyme).
