Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound lean ground turkey
  • 1 medium yellow onion chopped
  • 1 shallot finely chopped
  • 3 cloves garlic minced
  • ¼ cup tomato paste
  • 1 medium sweet potato peeled and cubed (about 1 lb)
  • 1 cup chicken broth
  • 2 teaspoons smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 cups chopped fresh kale
  • Pinch of crushed red pepper flakes
  • 1 ripe avocado sliced
  • Fresh mint or parsley for garnish optional

Instructions
 

  • Heat oil in a large skillet over medium heat. Add turkey, onion, and shallot. Cook 8-10 mins until turkey is cooked and veggies are soft.
  • Add garlic; cook 1 min. Stir in tomato paste; cook 1-2 mins.
  • Add sweet potato, broth, smoked paprika, salt, and pepper. Bring to a boil, then reduce heat.
  • Cover and simmer for 10-12 mins until sweet potato is tender.
  • Stir in kale and red pepper flakes. Cook 2-3 mins until kale wilts.
  • Serve topped with avocado slices and fresh herbs.

Notes

  • Kale Tip: Make sure to remove the tough stems from the kale before chopping for the best texture.
  • Smoked Paprika: This ingredient is key for the signature smoky flavor. Do not substitute with regular paprika.
  • Make it Creamier: Stir in a splash of heavy cream or coconut milk at the end with the kale for a richer sauce.
