- 1 tablespoon olive oil
- 1 pound lean ground turkey
- 1 medium yellow onion chopped
- 1 shallot finely chopped
- 3 cloves garlic minced
- ¼ cup tomato paste
- 1 medium sweet potato peeled and cubed (about 1 lb)
- 1 cup chicken broth
- 2 teaspoons smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 3 cups chopped fresh kale
- Pinch of crushed red pepper flakes
- 1 ripe avocado sliced
- Fresh mint or parsley for garnish optional
Heat oil in a large skillet over medium heat. Add turkey, onion, and shallot. Cook 8-10 mins until turkey is cooked and veggies are soft.
Add garlic; cook 1 min. Stir in tomato paste; cook 1-2 mins.
Add sweet potato, broth, smoked paprika, salt, and pepper. Bring to a boil, then reduce heat.
Cover and simmer for 10-12 mins until sweet potato is tender.
Stir in kale and red pepper flakes. Cook 2-3 mins until kale wilts.
Serve topped with avocado slices and fresh herbs.
