For Dressing:
- 1 tsp lemon juice
- ½ small garlic clove minced
- 1 tbsp Greek yogurt
- 1 tbsp light mayonnaise
- ¼ tsp mustard powder
- 1 anchovy fillet minced (or ½ tsp paste)
- ½ tbsp grated Parmesan
- Black pepper
- 2-3 tbsp water
For Filling:
- 3 oz 80g cooked chicken, shredded
- ¼ cucumber diced
- 3 cherry tomatoes halved
- 4 romaine leaves shredded
In a bowl, whisk all dressing ingredients (lemon juice through pepper) with 2-3 tbsp water until smooth.
Add chicken, cucumber, tomatoes, and lettuce to dressing. Toss to coat.
Toast pita bread until warm and slightly crisp.
Slice open pita and stuff with chicken Caesar mixture. Serve immediately.
