Creamy Pepperoncini Chicken

- 1 pound boneless skinless chicken breasts, cubed
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup chopped yellow onion
- 3 cloves garlic minced
- ¾ cup chicken broth
- ½ teaspoon dried oregano
- ¼ teaspoon crushed red pepper
- ¾ cup heavy whipping cream
- ½ cup grated Parmesan cheese
- 1 teaspoon pepperoncini brine
- ½ cup sliced pepperoncini peppers
- Fresh parsley for garnish
Season chicken with salt and pepper. Heat oil in a skillet over medium heat. Cook chicken until golden and cooked through (5-7 mins). Remove to a plate.
Add onion to skillet; cook 2 mins. Add garlic; cook 1 min until fragrant.
Add broth, oregano, and crushed red pepper. Simmer 2 mins until reduced by half.
Reduce heat to low. Stir in cream, Parmesan, and pepperoncini brine. Simmer 3-5 mins until slightly thickened.
Return chicken to skillet. Add sliced pepperoncini. Stir to coat and heat through.
Garnish with parsley and serve.
