Ingredients
  

  • 1 boneless beef chuck roast 3 lbs, cut into chunks
  • 3 medium potatoes peeled and cut into chunks
  • 4 medium carrots cut into chunks
  • 2 cans 11.5 oz each tomato juice
  • ΒΌ cup Worcestershire sauce
  • 3 tablespoons quick cooking tapioca
  • Chopped fresh parsley optional

Instructions
 

  • Place beef, potato, and carrot chunks in a 5 qt slow cooker.
  • Sprinkle tapioca over the top.
  • Pour tomato juice and Worcestershire sauce over everything.
  • Cover and cook on HIGH for 6-8 hours, until meat and vegetables are very tender.
  • Garnish with parsley if desired and serve.

Notes

  • The Tapioca Secret: Don't skip the quick cooking tapioca! It's a natural thickener that creates a rich, glossy sauce without making a roux or adding flour.
  • No Peeling Needed: For a more rustic dish, you can leave the skins on your potatoes and just give them a good scrub.
