- 1 boneless beef chuck roast 3 lbs, cut into chunks
- 3 medium potatoes peeled and cut into chunks
- 4 medium carrots cut into chunks
- 2 cans 11.5 oz each tomato juice
- ΒΌ cup Worcestershire sauce
- 3 tablespoons quick cooking tapioca
- Chopped fresh parsley optional
Place beef, potato, and carrot chunks in a 5 qt slow cooker.
Sprinkle tapioca over the top.
Pour tomato juice and Worcestershire sauce over everything.
Cover and cook on HIGH for 6-8 hours, until meat and vegetables are very tender.
Garnish with parsley if desired and serve.
