- 2 lbs boneless skinless chicken thighs (about 1 kg)
For the Marinade:
- 2/3 cup plain yogurt
- 2 teaspoons paprika
- 2 teaspoons ground cumin
- 1/2 teaspoon cinnamon
- 1/2 teaspoon red pepper flakes
- 2 teaspoons garlic powder
- Zest and juice of 1 lemon
- Salt and freshly ground black pepper to taste
Cut chicken thighs lengthwise into 1 inch strips or cubes.
In a large bowl, mix yogurt, paprika, cumin, cinnamon, red pepper flakes, garlic powder, lemon zest, lemon juice, salt, and pepper.
Add chicken to marinade and coat well. Cover and refrigerate for at least 30 minutes, preferably 2 hours or overnight.
If using bamboo skewers, soak in water for 30 minutes. Thread chicken onto skewers.
Cooking Methods: • Grill: Preheat to medium high. Grill 10-15 minutes, turning occasionally, until internal temp reaches 165°F (74°C). • Oven: Preheat to 400°F (200°C). Bake on lined sheet 20-25 minutes, turning halfway.• BBQ: Cook on medium high for 10-15 minutes, turning occasionally. Rest a few minutes before serving.
- Marinating longer (up to 12 hours) yields more flavor and tenderness.
- Chicken breast can be used instead of thighs; reduce cooking time slightly.
- Store leftovers in fridge up to 4 days; freeze up to 3 months.
