- 1½ pounds baby potatoes quartered
- 12 oz smoked sausage sliced into rounds
- 2 tablespoons olive oil
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese optional
- 2 tablespoons sour cream optional
- Salt and black pepper to taste
- Chopped parsley or green onions for garnish
Preheat oven to 400°F (200°C).
In a large bowl, toss quartered potatoes with olive oil and half of the ranch seasoning.
Spread potatoes on a baking sheet or oven-safe skillet and roast for 20–25 minutes, or until golden and fork-tender.
Meanwhile, in a large skillet, sauté smoked sausage over medium heat until browned and crispy on the edges. Set aside.
Add roasted potatoes to the skillet with sausage. Stir in remaining ranch seasoning and sour cream, if using.
Sprinkle cheddar and mozzarella cheese over the mixture. Cover the skillet and cook for 3–5 minutes, or until cheese is melted and bubbly.
Garnish with chopped parsley or green onions and serve warm.
