Cheesy Hamburger Rice Casserole

- 1 pound ground beef
- 1 10.75 oz can cream of mushroom soup
- 1 14.5 oz can diced tomatoes with juice
- ½ cup long grain white rice uncooked
- ¾ cup shredded mozzarella cheese or American cheese
- Salt and pepper to taste
In a large skillet over medium-high heat, cook ground beef until browned. Drain excess fat.
Stir in the cream of mushroom soup, diced tomatoes with juice, and uncooked rice.
Reduce heat to low, cover, and simmer for about 15 minutes or until rice is cooked, stirring occasionally.
Preheat broiler. Transfer mixture into a casserole dish and top with shredded cheese.
Broil until cheese is melted and lightly browned, about 1–2 minutes.
Season with salt and pepper to taste. Serve warm.
