Cheesy Hamburger Rice Casserole

Ingredients
  

  • 1 pound ground beef
  • 1 10.75 oz can cream of mushroom soup
  • 1 14.5 oz can diced tomatoes with juice
  • ½ cup long grain white rice uncooked
  • ¾ cup shredded mozzarella cheese or American cheese
  • Salt and pepper to taste

Instructions
 

  • In a large skillet over medium-high heat, cook ground beef until browned. Drain excess fat.
  • Stir in the cream of mushroom soup, diced tomatoes with juice, and uncooked rice.
  • Reduce heat to low, cover, and simmer for about 15 minutes or until rice is cooked, stirring occasionally.
  • Preheat broiler. Transfer mixture into a casserole dish and top with shredded cheese.
  • Broil until cheese is melted and lightly browned, about 1–2 minutes.
  • Season with salt and pepper to taste. Serve warm.

Notes

  • Try using cheddar or Colby Jack for more flavor.
  • Can be made ahead and reheated later.
