- 2 bone in thick cut pork chops (about 1 inch thick)
- 1 tsp kosher salt
- ½ tsp black pepper
- 2 tbsp vegetable oil
- 4 tbsp unsalted butter
- 3 tbsp fresh garlic minced (about 6-8 cloves)
- 3 tbsp packed brown sugar light or dark
- ½ tsp red pepper flakes adjust to taste
- Fresh parsley chopped (for garnish)
Preheat oven to 400°F (200°C). Pat pork chops dry and season both sides with salt and pepper.
Heat oil in a large, oven safe skillet over medium high heat. Sear chops for 3 minutes per side until golden brown. Transfer to a plate.
Reduce heat to low. In the same skillet, melt butter. Add garlic, brown sugar, and red pepper flakes. Whisk for 2-3 minutes until bubbly and combined.
Return pork chops to skillet, spooning sauce over top. Transfer skillet to oven.
Bake for 8-10 minutes, or until internal temperature reaches 145°F (63°C).
Remove from oven, transfer chops to a plate, and let rest for 5 minutes. Garnish with parsley and serve with pan sauce.
- Meat Thermometer: Essential for perfect, juicy results. Cook to 145°F.
- Skillet: If you don't have an oven safe skillet, transfer seared chops and sauce to a baking dish before baking.
- Thinner Chops: For ½ inch chops, you can often cook entirely on the stovetop. Sear and then simmer in the sauce until 145°F.
