Baked Corned Beef in the Oven

- 1 package corned beef 3-4 lbs, with seasoning packet
- 1/4 cup Dijon mustard
- 1 sheet heavy duty aluminum foil
Preheat oven to 350°F. Place a large piece of heavy duty foil in an oven proof dish with high sides.
Remove corned beef from package, set seasoning packet aside. Rinse with cold water, pat dry. Place on foil, fatty side up.
Rub 1/4 cup Dijon mustard all over the meat. Sprinkle seasoning packet evenly over the top.
Tightly wrap the corned beef with foil. Bake for 1 hour per pound.
Optional: Open foil and broil for 5 minutes until top is crispy.
Rest for 10 minutes before slicing against the grain. Serve with sautéed cabbage.
- Cook time is 1 hour per pound. For a 3 lb roast, bake 3 hours.
