skinless chicken breasts, cubed

all purpose flour
Salt and black pepper

vegetable oil

piece fresh ginger
grated (about 1.5 tbsp)

garlic

low sodium soy sauce

honey

Cooked rice and steamed broccoli

Instructions
Toss cubed chicken with flour, salt, and pepper.
In a bowl, whisk ginger, garlic, soy sauce, honey, and half the lemon juice.
Heat oil in a large skillet over medium high heat. Sear chicken until golden, 2-3 mins per side.
Pour sauce over chicken. Simmer for 8-10 mins, until sauce is thickened and chicken is cooked.
Remove from heat. Stir in remaining lemon juice to taste.
Serve immediately with rice and broccoli.
Notes
Grate the ginger for the best texture and flavor.
For a thicker sauce, mix 1 tsp cornstarch with 1 tbsp water and stir in during the last minute of cooking.
Cook the chicken in batches if needed to avoid steaming and ensure a good sear.
